Do endings count too? the second one from Bleach is definitely one of my favourites. A happy, upbeat tune coupled with a different animation every episode that is subsequent and related to the arch.. Nowadays it's mostly just moving pictures and backgrounds :/

If endings count, I'd have to say the ending to the original Tenchi Muyo OVAs and the Fullmetal Alchemist ending that has Winry with the dog.

Suzumiya - Not as fun as the ending but still good.
US dub of Sailor Moon! Fighting evil by moonlight! Winning love by daylight! Never running fro.... Never mind
Speed Racer - Seriously. Both US and Japanese were perfect for the show.
