1 cup cooked brown rice
1 cup wheat germ
1 cup rolled oats or oat bran (pulse rolled oats in a dry food processor to make your own oat bran)
1 cup finely chopped walnuts
1 cup finely diced mushrooms
1 medium carrot, finely diced or shredded
(using a food processor to chop the walnuts, mushrooms, and carrots is fast and easy)
1/2 tsp. each thyme, marjoram, and sage
1/4 tsp. onion powder
2 TB soy sauce
2 TB dijon mustard
1 TB peanut butter

1. Preheat oven to 350.

2. Combine all ingredients and mush together with your hands for about 2 minutes, until it binds together well.

3. Pat into a greased 9x5 loaf pan, and bake for 1 hour. Let stand 10 minutes before serving.

Hmm - it appears to be a recipe for vegan meatloaf - huh, that must be from yesterday.
