As for me:
I CAN: Write
I'm working on my Master's in Writing right now; our thesis project is a full length novel. I wanted to work with a story I can possibly sell, so mine is a chick-lit type book about a woman who walks away from her life. My mentor thinks it's marketable. I've had a short story published (I want to get more out there, but I don't have time with school right now); and I work part-time as a correspondent for the local newspaper. I even got one piece of fan mail! (Ok, so they mostly wanted to complain about a wind farm that was going up that I had written about. But it still counts).
I CAN'T: Sing
I'm not tone deaf, so I can't blame it on that. My voice just sucks. It's not a bad speaking voice, although I do sound younger than I am. (At least people tell me that a lot. I'm 25, and in my normal speaking voice, I probably sound like a teenager). Anyhow, the only way my singing sounds slightly passable is really low notes. Imagine a little girl singing Luther Vandross. But I do like to sing, so I have to limit myself to when I'm alone, or just with my boyfriend. Sometimes to annoy him I call and leave a message on his answering machine of me singing to something silly, like Bon Jovi. If I can't use my voice for good, might as well use it for evil.
So what can and can't you do?

I can sing, act, write, draw, read really fast, and I have a good color sense.
I can't do anything that involves physical activity, like sports or yardwork or long walks.

Unfortunately, I'm rather well-rounded, so I'm not especially good at anything, just decent to pretty good at a rather wide range of things. :\ But to have something to put on here. xD
I can: Persuade or manipulate with words - Eh, had to do it pretty much all of my school years to keep out of fights every other day. Had to know when to talk offensively (not to just give them what they want, and enough to get them to back off) and when to speak defensively and back off. Never ended up getting in a fight.
I can't: Swim - Not much to say, I can't swim very well. I mean, I can doggie paddle veryyyyyy slowllllyyyyy xD I'm too embarrassed to really try it at public pools, though. I can run or walk pretty quickly in water, I guess.

I can cook pretty darn well. I've got a fairly short list of ingredients that I can work with, since I'm a vegan and I'm allergic to wheat, but I still make it work. I rock that way.
I can't snap my fingers. I've been trying to get better at it lately, but I still just make this pathetic sound that doesn't really sound like a snap.

I can draw. I am an awesome artist, man. Sure I'm not astounding or fantasmical, but I'm pretty darn good. Go me!
I can't run. Well, I kinda can for an extremely short amount of time... like... 10-30 seconds. Then I get too tired. Bogus to the max.

I can: sing, dance, play instruments, etc. I've got a good sense of music. Although I do need more practice on my instruments.
I can't: draw. I'll try, occasionally, but everything just ends up looking like a disproportional blob. So I just watch other people drawing or look at stuff people have drawn and worship their amazing skills.

I can make an annoying popping noise with my mouth. After me and my friends saw Shrek 2, some of them would go around doing it ... and I couldn't! So I practised and practised (usually on my walk home) and I finally worked out how to do it. Heh. Perseverance pays off! (good luck with the finger snapping, Pudding!)

I can run for long periods of time, do incredible amounts of situps without stopping, and play volleyball.
I cannot do a pull up.

I can write at about a page on almost any topic without looking any information up. It's just a matter of stretching a single fact into six hundred words, with "logical conclusions" and lots of filler words/phrases.
I can't eat most meat like a normal person. It's too hard for me to cut it, so I wind up abandoning silverware and eating like the heathen I secretly am.

I can whistle. My siblings can't -- most of them, at least. Occasionally one of them will try and manage to get out a shrill one, but I can whistle tunes and stuff. It's fun, they'll start shrilling and I'll start a tune... makes them insanely jealous.
I can't run. Well, I can, but I can't enjoy it, and I usually can't get farther than an eighth-mile of straight running at a time, and most of the time I'm forcing myself for over half of that amount. *shrug* It's kinda hard to explain why.
