i'm currently going through a phase of loving cheese on toast, but just cheddar cheese gets a bit boring. What varities of cheese on toast can you suggest?

Some of my current favourites are:
~ Cheddar and Worcestershire Sauce
~ Cheddar and Sliced Tomato
~ Cheddar and Salami/Ham/Sliced Chicken/Sliced Turkey
~ Brie
~ Stilton

I used to make pizza out of toast- you put tomato sauce on the bread, then the white cheese you use on pizza (I don't remember what it's called) and then put pepperoni/sausage/whatever pizza topping you like on it. It was good.

My mom bought some pink cheese a while back. It had port in it and it tasted lovely. So it looks ultra cool AND tastes nice. What more could you ask for? XD

Have you ever had a croque-monsieur? It's basically a grilled ham-and-cheese sandwich, but with an extra slice of cheese on the top (usually both are swiss). It's extremely good, and it's French. :D

There's also a croque-madame, where you add an egg on top of it along with the cheese.

I do that all the time, and the cheese is mozzarella (most likely).

Try using different kinds of cheeses. I make mozzarella grilled cheese sandwiches, muenster grilled cheese sandwiches, etc.

Do you mean like a grilled cheese sandwich (open-faced or otherwise)?

I make mean grilled cheese. Pepperjack on sourdough. Pan seer some meat, turkey or chicken works best. Cook both sandwich halves separate, then throw the meat between them with a bit of extra cheese as a binder. You get a great sandwich.

If that is not what you meant, the disregard me secret grilled cheese recipe that I feel everyone should know.

When I'm really really lazy and I want grilled cheese I will make toast and just put plain old american cheese on it.

Otherwise, I don't put cheese on toast. I like cheddar on whole wheat crackers with some brown spicy mustard, and a good runny brie on a warm baguette is just about heaven for me. Add that ripe avocado and you really have a winner (not that I have any of that in the house right now).
