For Hagan, just "enemies". It gets me a book quite often. Once even two books (and neopoints IIRC) for an A+.
I haven't been successful yet with the Skarl classic "What do you do if fierce Peophins has eaten too much tin of olives? You offering them a tin of what what what!". The Moody avatar is pretty easy to get, as he usually doesn't like the jokes you tell him much.

Sometimes it works, sometimes it doesn't. As far as I know it's pretty much random as to what is going to work. I've had success with 'the' one day, and then got nothing using the same thing the next day.

I don't think there's really any secret. At both kings' castle, I try to structure the joke/wisdom so it makes at least some kind of sense. Grammatical, if nothing else. But that doesn't guarantee anything, I'd say I've had about a 50/50 success rate doing that. You'd probably have just as much luck using a single word. (Two, in Skarl's case.)
