Okay, I've never heard the full versions of the originals of these two, but Feist's "Inside & Out" and Stars' "This Charming Man" are pretty awesome.

Fountains of Wayne's cover of "...Baby One More Time" is pretty good.

Coldplay also did a mini-cover of Johnny Cash's "Ring of Fire" on Austin City Limits. It was good for a non-country band.

One of my favorite covers at the moment is "Hurt" by Johnny Cash (originally a Nine Inch Nails song). I can't think of any others right now.

Tori Amos's cover of "'97 Bonnie and Clyde" (originally by Eminem).
Sinead Lohan's cover of "To Ramona" (originally by Bob Dylan).
Joan Osborne's cover of "Man in the Long Black Coat" (also orignally by Bob Dylan).
And, depending on my mood, occassionally I prefer Metallica's version of "Turn the Page" over Bob Seger's, but most of the time I prefer Seger's version.
