Perhaps because she is the lead singer. When I used to like bands, I always cared about the lead singer, not the rest of the band. Anywho, it is Evanescence not only Amy Lee. She didn't even write the song "My Immortal". That was Ben Moody.

I was at work tonight and the music was on-- I sing along with nearly every song. The best ones though, are the ones where you catch other people singing along too. Some of the ones that it happens most often with are:
Maroon 5 - This Love
Alicia Keys - If I Ain't Got You
Linkin Park - Breaking the Habit
Outkast - Hey Ya
When you hear ten people all burst into singing at the top of their lungs, it's great to sing along (and you don't even have to be embarrassed).

Yeah, unfortunately happens a lot. I guess Amy Lee is the "face" of the band, which is fair enough. :)
