I like the first american Pokemon theme. At one point I knew all the words.
I also like the Mega Man cartoon theme (no surprise there).

Non-anime? Oh dear, that's hard....
I suppose it would be Firefly, or perhaps The Simpsons because I grew up with that theme song.
For anime, I'd have to say Riraito from FMA, although I also love Shell from Witch Hunter Robin and Rose from NANA. As far as endings go, it's between Thank You!! (Bleach, although all the Bleach endings are awesome), A Little Pain (NANA), and Hare Hare Yukai (Suzumiya Haruhi no Yuuutsu)

I dont watch anime, or much tv in general, so that narrows it down. I'll say Star Trek: TNG. Its really so epic. I get excited when the ship flies by, and the theme plays, and everything.
I have to admit that Mister Rogers Neighborhood is also one of my favorites. "Its a beautiful day in the neighborhood, a beautiful day for a neighbor! Would you be mine, could you be mine?"
