I thought of some others besides the Johnny Cash cover I mentioned way back.

Phish's cover of "Gin and Juice" (Snoop Dogg)
Fuel's cover of "Daniel" (Elton John)

Barenaked Ladies have a cover of "Material Girl" (Madonna) that I love <3

Anything covered by William Shatner
Stewie Griffin (Family Guy) covering William Shatner's cover of "Rocket Man" by Elton John

Cibo Matto's cover of About a Girl by Nirvana was great. ^_^

The Self version of What a Fool Believes

Dresden Doll's version of Hit Me Baby One More time is also awesome.

I HATE coldplay, but I love Natasha Bedingfield's cover of the Scientist.
Oh, and Aerosmith's cover of I don't wanna close my eyes (was that some country singer or something originally?)

For some odd reason, I'm in love with Rancid's cover of "La Bamba" (Ritchie Valens) and Sugarcult's "I Melt with You" (Modern English). Galaxie 500's "Ceremony" (New Order) is better than the original. Other covers I really love: "Bridges and Ballons" (Joanna Newsome) - The Decemerists, "Can't Take My Eyes Off You" (Frankie Valli) - Muse, and practically anything by Richard Cheese and Me First and the Gimme Gimmes.

Don't be afraid to see the truth, even if no one wants you to. Be yourself and not a fool. Don't ever be afraid to speak your mind and listen to criticism. Dissent is keeps our country progressive and willingness to challenge yourself is what keeps yourself ever evolving.

Fiona Apple - "Across the Universe"

Usually any cover of songs by the Beatles makes me cringe, but Fiona makes this song amazing.

I like a lot of covers by The Dresden Dolls but my favourites are:
Blueprint (Fugazi)
Hallelujah (I'm not sure)
Life On Mars (David Bowie)
Lua (Bright Eyes)
Mad World (Tears For Fears)
War Pigs (Black Sabbath)

Also, covered by Pretty Balanced:
Hero Of The Story (Regina Spektor)
Cemo Limo (Regina Spektor)

I would like to add Christine Evans' and Sarah Mclachlan's covers of "River". Beautiful stuff.

Annie's Song - Rivers Cuomo
Tomorrow - Rivers Cuomo

And The Killers' cover of Why Don't You Find Out For Yourself? is OK.
