Do endings count too? the second one from Bleach is definitely one of my favourites. A happy, upbeat tune coupled with a different animation every episode that is subsequent and related to the arch.. Nowadays it's mostly just moving pictures and backgrounds :/

If endings count, I'd have to say the ending to the original Tenchi Muyo OVAs and the Fullmetal Alchemist ending that has Winry with the dog.

D.Gray Mans Op 1 and Op 3 are pretty good.

Recently? Gundam 00 Op 2 is nice.

Sayonara Zetsubou Sensei and Season 2's ED are awesome.

Bebop - Tank is awesome
Ranma Season 1 - I know, it is lame and just them running, but I love it!
