My nimmo was green before the zap and then when I zapped her I got ... and she changes colour to green!! has this ever happened to anyone else?

Yes, sometimes that happens, afterall, this zap thing is sort of random...

I have two glowing pets now (at least temporarily) so this is kind of hilarious.
I'm a little disappointed though. My glowing quiggle looks pretty much exactly the same as she/he did when she/he was green.
Well except the side stripes are now yellow instead of red, which minimizes the horrible clashing a bit.
