So many kid's books I loved...
One of the ones I can think of right now is Stellaluna, about a baby bat who's raised by birds.

The same author also did one about an amazon snake, called Verdi, but I don't remember that one as well.
I loved the Butter Battle Book also.
When I got into chapter books it was survival-themed ones I liked -- Pathki Nana, The Hatchet (Brian's Winter was better) etc. Like pretty much every kid in my school, I read a ton of Ken Thomasma (Soun Tetoken was also good!) and Brian Jacques (Try reading one without getting really hungry. It doesn't work.)
Also Animorphs oh god I still love Animorphs.
I know I liked picture books better, but I can't think of too many off the top of my head. There was one with a witch who turned a bunch of children into food... A google result tells me it is called Heckedy Peg.
